Nourishing Coconut Collagen Overnight Oats

Nourishing Coconut Collagen Overnight Oats

Mornings just got easier (and more delicious) with these Coconut Collagen Overnight Oats! This creamy, nutrient-packed breakfast is perfect for busy days when you need something filling, energizing, and nourishing. Infused with collagen peptides for added protein and gut support, plus chia seeds for fiber and omega-3s, this recipe is a delicious way to fuel your body from the inside out. I like to prep several jars for the week at once so I have breakfast ready to go! I love these glass jars (glass is a great material to use as it's not endocrine-disrupting).

Why You’ll Love This Recipe

Rich in Protein & Healthy Fats – Collagen peptides and chia seeds provide essential amino acids and sustained energy.

Gut-Friendly & Dairy-Free – Made with unsweetened coconut yogurt and almond milk for a creamy texture without dairy.

Perfect for Meal Prep – Prepare it the night before for a quick grab-and-go breakfast.

Naturally Sweetened – A touch of maple syrup and vanilla bean paste add just the right amount of sweetness.

Ingredients (1 Serving):

  • ½ cup organic oats - organic is crucial here as most conventional oats are contaminated with glyphosate, a pesticide linked to cancer
  • 1 tbsp chia seeds
  • 1 scoop collagen peptides - I love the ones from Perfect Supplements as they're grass-fed and transparent about their testing
  • ½ tbsp maple syrup
  • ⅛ tsp vanilla bean paste (or vanilla extract)
  • ¼ cup unsweetened coconut yogurt - I buy the brand Cocojune (organic & minimal ingredients)
  • ½ cup almond milk - I buy the brand Malk or Califia Farms (organic & minimal ingredients)

Instructions:

  1. Mix Ingredients: In a jar or airtight container, combine the oats, chia seeds, and collagen peptides.
  2. Add liquids: Stir in the almond milk, coconut yogurt, maple syrup, and vanilla bean paste until well combined.
  3. Refrigerate Overnight: Cover and refrigerate for at least 4 hours or overnight to allow the oats and chia seeds to absorb the liquid.
  4. Stir & Enjoy: In the morning, give it a good stir and enjoy as is, or top with shredded coconut, nuts, or fresh fruit! My favorites right now are cherries and blueberries.
