Last week, I saw a girl on Instagram make "Lazy Girl Dumplings" - people in the comments were complaining how this really wasn't that lazy of a recipe, and it was still cooking.
These came together in about 25 minutes for me (from the moment I entered my kitchen to the time we were sitting down to eat), which is a strong starting point. Total actual cooking time was about 10-15 minutes (this will differ based on how large your dumplings are), and it was passive, which I love. I like how this recipe gives the savory, comforting feeling of a dumpling without fully wrapping them. And the best part is, at the end of it all, these dumplings were delicious and satisfied our craving for takeout. So overall? A huge win.
Is this still cooking? Yes. Is it quicker than most dinner recipes I make? Also yes. So, to me, these are more "Simple and Quick Dumplings." If you're interested, here's the recipe.
Simple and Quick Dumplings
Ingredients:
- 1 lb ground chicken, turkey, or beef (I used turkey)
- 1 bunch green onions, chopped
- 2 tbsp coconut aminos
- 2 tsp sesame or olive oil + 1 tsp for cooking
- 1 tsp garlic powder, or 4 cloves crushed garlic
- 1 tsp ginger powder, or 1-inch chopped ginger
- 1/4 + 1/3 cup broth (any kind, I used chicken bone broth)
- 1/2 tsp black pepper
- pinch of salt
- 1 tbsp rice vinegar (optional)
- if you want it spicy: 1 tsp sriracha + 1/2 tsp chili flakes
- 8-10 dumpling or wonton wrappers
Directions:
- Combine all of the ingredients except for the wonton wrappers into a large bowl. For the broth, only add 1/4 cup into the mixture (you'll use the other 1/3 cup later). Stir until all ingredients are fully combined
- Drizzle 1 tsp olive or sesame oil into a large skillet. Then, using an ice cream scoop or large spoon, place scoops of dumpling filling into the skillet.
- Place a dumpling wrapper over each dumpling ball, then pour in 1/3 cup of broth.
- Set the skillet over high heat until the broth begins to bubble. Then, turn to medium heat and cover for 10-15 minutes or until dumplings are cooked through.
- Add any desired toppings (sesame seeds, green onions, chili oil, sriracha, or coconut aminos) and enjoy!
