Ingredients:

For the Tacos:

  • 4 corn tortillas, fried until crispy
  • 2 salmon fillets, air-fried
  • 1 tbsp olive oil
  • Citrus seasoning - I love the one from Trader Joe's (to taste)

For the Quick Cabbage Slaw:

  • 1.5 cups shredded cabbage
  • 1 tbsp olive oil
  • 1 tbsp rice vinegar
  • Salt & pepper (to taste)

Toppings:

  • ½ red onion, diced
  • Fresh cilantro, chopped
  • My favorite guacamole (optional)

Instructions:

  1. Prepare the Salmon: Preheat your air fryer to 375°F. Coat the salmon fillets with olive oil and season with citrus seasoning. Air fry for 8-10 minutes or until flaky and cooked through.
  2. Make the Cabbage Slaw: In a bowl, toss the shredded cabbage with olive oil, rice vinegar, salt, and pepper. Let it sit for a few minutes to enhance the flavors.
  3. Fry the Tortillas: In a pan with a small amount of oil, fry the corn tortillas until crispy, then set aside.
  4. Assemble the Tacos: Flake the cooked salmon into pieces and place them onto the crispy tortillas. Top with cabbage slaw, diced red onion, and chopped cilantro.
  5. Serve & Enjoy: Serve immediately with your favorite salsa or lime wedges for an extra burst of flavor.
